Yummy Salad.... Yummy Springtime!!!!

I went to the first BBQ of the season last week!! Finally spring feels like it finally arriving YAY!!! I took a pic of the salad I took, it had so many beautiful colours. Amazing that nature makes such an intense purple!! Anyways, pretty simple really, if you want the recipe, add a comment below requesting so and Ill pop it up.
I paid $4.50 for a head of broccoli and $4.25 for a few bunches of silverbeet at the supermarket the other day- Ironically, you could buy a 4 pack of 2litre coke for a fraction of that. What is going on!! I cant wait for our vegies to start growing... we are starting a patch this season.

Sure-
Pumpkin
Red Cabbage
Corn (canned is good)
1/2 cup sunflower and pumpkin seeds
Olive Oil to drizzle
Balsamic Vinegar(just a dash)
1 Cup Couscous
1tsp miso paste

Step 1- CousCous:
Mix 1 cup of boiled water and a teaspoon of miso, add to 1 cup of couscous. Cover and leave to soak up.

Step 2-
Boil the pumpkin in water till just cooked, so its firm not mushy (aprox 7 min depending on size of cubes you choose).
Drain and drench in cold water.
Chop up the red cabbage into strips.
toast the sunflower and pumpkin seeds in a dry pan till brown.

Mix all veges, and couscous in a big salad bowl, with some pepper and salt. drizzle with olive oil, and a bit of balsamic vinegar.

In terms of quantities- I just go on what I feel like, ie- more corn, less cabbage, etc Same goes with the dressing- the vinegar is good, but you dont need too much :)

The red cabbage looked rather like the purple beans in my garden... they'd go great in this salad as well!
